In honour of pancake (Shrove) Tuesday, here's a baby pancake recipe made with breastmilk and without egg.
Ingredients:
1/4 of a medium sized banana
6 tbsp (3 oz) breast milk
1 tbsp vegetable oil
1/4 cup white flour
1/4 cup whole wheat flour
1/2 tbsp sugar
1 1/2 tsp baking powder
Instructions:
1. In a medium sized bowl, mash banana.
2. Mix breast milk and oil with banana. Set aside.
3. In a separate bowl, mix together flours, sugar, and baking powder.
4. Mix wet and dry ingredients. Stir until smooth.
5. Spoon batter onto a hot griddle or frying pan on medium heat.
6. Watch for bubbles to form. The bubbles will burst at first and then leave holes. Flip pancake when holes are evenly distributed across pancake and top surface begins to look less glossy. Brown on second side and serve.
Serving suggestions:
- Cut into strips or really small bite size pieces and watch your little one enjoy!
- Instead of syrup, top with your little ones favourite pureed fruit.
- Cook the leftover batter and freeze for later.
