    Default Muffin Recipes

    Oatmeal Muffins
    1 cup flour
    1/4 cup sugar
    2 tsp baking powder
    1 cup dry infant oatmeal cereal
    1/2 cup milk
    2 TBsp oil
    3 eggs, beaten
    In a large bowl, mix together flour, sugar, baking powder and infant cereal. Add milk, oil and eggs and stir only until blended. Spoon batter into 8 greased or paper-lined muffin cups. Bake at 425 degrees for 20 minutes.

    Banana Bread Muffins

    Makes 6 muffins

    Ingredients

    Directions

    1. Cream the margarine with the sugar; add the egg and mix. Mix the flour, oats, baby cereal, cinnamon, baking powder and salt.

    2. Incorporate the banana to the margarine mix.

    3. Add the drys alternating with the milk.

    Bake at 400F for 20-30 mins
