Default is carrot a safe and popular puree??

wanting to make carrots for my little one 7 months, just reading about something called "nitrates" that are substances lost or leached during the cooking process that can cause some sort of oxygen deficiency in babies if consumed in large amounts?? any one worry about this? i just steam cooked a batch of organic carrots. pureed it with tap water (not the cooking water). wondering if anyone has any other info? or cooking tips?? other foods with risk of nitrate poisoning include spinach and beets....

Just don't use the cooking water to puree with the carrots and it's fine.

I would think the key to it is that it isn't something you eat in large amounts. Like my dd has carrots maybe twice a week, I'm not at all concerned about it. Sometimes it's store bought and other times it's just cooked ones smushed up.

whats wrong with the cooking water?
also if you eat too many carrots you turn orange so i think aslong as you kid isn't orange you didn't reach the "too much" limit.
