I thought I'd also add this. This is the recipe I used for my stuffing the first year I was diagnosed (not my blog). I ended up adding more broth than the recipe calls for but it at least gave me a point to start from. (I also had to travel and bring my own stuffing so it had to be reheated which may have dried it out)

This is the gluten-free stuffing we will be eating.

Good thread, thanks for sharing!

I want to mention that I was at Walmart this weekend, and they had a free GF recipe book in one of the aisles. However, as I was browsing through it, one of the first recipes called for imitation crab meat, which I was under the impression is not safe? So just beware if you do pick that one up.
